Mahoosuc Muffins


1-1/3 cups sugar
6 apples (tart – like McIntosh or Granny Smith)
1 cup chopped fresh or frozen cranberries
1 cup shredded carrots
2 ½ cups all-purpose flour
1 Tbl. baking powder
2 tsp. baking soda
½ tsp. salt
2 tsp. ground cinnamon
2 eggs, lightly beaten
½ cup vegetable oil


Grate apples and carrots into bowl (very small pieces). In a large mixing bowl, combine apples and sugar. Gently fold in cranberries, carrots and nuts. Combine dry ingredients; add to fruit mixture. Toss to moisten dry ingredients. Combine eggs and oil; add to fruit mixture and stir just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 375 degrees for 20-25 minutes until muffins test done. Cool for 5 minutes before removing from pan.
